I told you I’d find something to do with the leftover roasted eggplant. I cut it into cubes, and put it in a wrap with sun dried tomatoes and cheddar cheese. A few minutes on each side in a frying pan coated with cooking spray, and I had an almost gourmet meal.

  2. what kind of bread/wrap are you using?? I'm always on the lookout for healthy wraps that aren't too high in calories!

  3. i was looking at the wrap too…it looks excellent compared to the white chewy ones that look uncooked

  4. @Lee – Sorry, have not used spreadable feta. I buy fat free feta from Trader Joe's usually.

    @Elizabeth and Nanc – I use Joseph's brand lavash, which are in the deli section of both Shaw's and Stop & Shop near me. I love them cold, toasted, or used as a pizza base!
