I know I haven’t been very chatty lately on the blog, so let’s try a question for today. What is your most memorable campus dining experience?
My answer: Eggplant Parmesan made with slices 2-3″ thick with the skin. Ugh! That was NOT my idea of Eggplant Parmesan.
Wow thats just how my mom use to make eggplant parm. The thicker the slice all the less to fry.You should have seen the size of the meatballs she would make!`YIKES….:)

Jaime and I would do a little happy dance whenever they had fried Zucchini sticks in the cafe…oh, and finding out they always had elbow macaroni in the salad bar. 😉 My dad loved the dining halls because parents got to eat free!

My most memorable campus dining experience was when my then 6-year old cousin (Nick!) spent the weekend in my dorm room. Let's just say that the dining hall experience is much more exciting to a 6-year old than to a college student. Example: soft serve ice cream with breakfast.
