This was my big pot of soup for the week, and I mean BIG. I could have fed, well, just about everyone I know. Good thing I really liked this soup, and it’s pretty too, with red, orange, yellow, and green. You could add more broth, but I kind of liked the texture of the soup this way. Don’t worry, I’ll be stashing some in my freezer for a lunch emergency!
