Angela from Oh She Glows came up with this recipe which contains just cashews, oats, flour, sugar, maple syrup, and chocolate chips of course! The whole batch comes together in just a few minutes, and you can roll the dough into balls and pop them in the freezer, or eat them right away. It’s the perfect frozen sweet treat for a hot summer night.
KC,What would you suggest subbing for the cashews to make a nut-free version? Sunflower seeds? Pumpkin seeds? Something else?

I don't have a food processor, do you think this would work using cashew butter or crunchy peanut butter? These were delicious! 🙂

Thanks for all the nice comments!@ME: You might try sunflower seeds as a substitute, but I would soak them first so they are softer.@Sarah: I was thinking that nut butter might work, but you may need to increase the flour and decrease the syrup so they aren't too sticky. Maybe I'll give this a try myself!
